From the Kitchen
We’re about to get to work on today’s activity… *teaser: it’s a science experiment.* We thought about doing something outside of the house tonight but the weather is getting increasingly bad and we have definite plans to go out tomorrow night, so we thought we’d stay in and try something we can do here at home. Stay tuned!
Before we start on our activity, though, I thought I’d update you on what’s been going on in our kitchen. Like a lot of people we’re trying to eat healthy and save money this new year so I’ve been making all of our meals from scratch.
First up: Bulgur with Peas and Mint, Leeks, Prunes, Walnuts and Orange Peel
I got the recipe from this blog, but decided I’d shorten up the name (it’s a bit wordy). So here we have Bulgur & Friends…
I think I’ve only ever had bulgur in tabbouleh, so I was excited to give it a try in a warm, cooked dish. All the different flavors were pretty wild but came together into a delicious dish. The prunes scared me, but they just blended in and added a nice sweetness. I recommend giving this recipe a try for sure. It fed us dinner last night and lunch today.
For dinner tonight I got resourceful. We had 2 tomatoes and a cup of canned tomato sauce left over from the ratatouille earlier in the week, and a good hunk of fontina cheese from the polenta that went with the ratatouille. Solution? Grilled cheese and tomato soup.
I started by roasting the tomatoes with salt, pepper, and a head of garlic (which I put in a foil pouch with some olive oil). The kitchen was quickly filled with an intoxicating aroma.
I combined the roasted tomatoes with the sauce, garlic, some chicken stock, a little bit of butter and some oregano on the stove top. After it was all hot I blended it into creamy goodness with my immersion blender.
The sandwiches were plain and simple: homemade bread + slices of fontina cheese. They went in our sandwich press for about 10 minutes and voila…
Such a simple but satisfying meal.
