Cookies!
One might think that I’m insane for going to a cookie swap where I’ll be gifted with an assortment of 4 dozen cookies… 6 days before my wedding. Maybe I am crazy, but I can’t resist a party where copious amounts of sugar filled cookies are exchanged. I plan to stock my freezer and patiently wait to enjoy them AFTER the wedding. We’ll see how my will power holds out.
I did have a taste of the cookies I made (had to make sure they weren’t poison, ya know?). Unfortunately they were INSANE good and I had a hard time putting an end to my taste testing. So what did I choose? Well, first let’s do a quick flashback to last year when I made these puppies:
Peppermint Meringues held together with dark chocolate. They were fun, festive, and a big pain in the ass to make. Not so much hard as tedious.
This year I jumped off the seasonal cookie train and decided on S’mores Cookies, after being tipped off to this site by Rebecca on Twitter. Oh I love the internet. Almost as much as I love the combination of chocolate and marshmallows.
Speaking of marshmallows, if you’ve been reading my tweets you may remember I have a bit of a crush on this stuff….
First of all: my roots are a hot mess and yes, I’m getting them done before the wedding.
Secondly: did you know Fluff is only 40 calories for two tablespoons??
The real reason I had a crush on Fluff is because it creates magic when combined with some really good hot chocolate.
Heaven…. I’m in heaven… and my heart beats-WAIT, sorry. Back to the cookies.
Yes, S’mores cookies. These little nuggets of deliciousness contain miniature chocolate chips INSIDE the batter, and mini marshmallows and full size chocolate chips ON TOP… added halfway through cooking… and did I mention there’s crushed up graham crackers in the dough? Just take a peak:
Fresh out of the oven the marshmallows are all puffy and pillowy, and then they sink down a bit…
The perfect combo of crunchy cookie on the outside, and gooey ooey marshmallow-y awesomeness towards the center.
Stacks and stacks and stacks of one pretty amazing cookie.
So tonight at the swap there were 15 of us, each with at least 4 dozen cookies which means we had a table full of 720+ cookies. Whoa, is that right? I guess it is.
Here’s my personal bounty of sugary goodness that I took home…
I got home after 10 and now it’s reaching 10:30… on a worknight! For shame. Gotta go get my beauty rest, I can’t afford to lose any sleep this week.

For the record, that table is 136″ long, so we can safely say we had over 140″ of cookies!! Can’t wait to sample all those goodies. Great idea to freeze them!

Cookies! I’m addicted! I definitely wouldn’t even put myself in that situation 6 days before my wedding but more power to you! You’ll look fabulous no matter what!

and uhm…i didnt realize Fluff actually exists.. I just assumed you used the marshmallow paste and since it comes in with so few calories… I’m on a mission to find it!
