Pancakes & Pizza = Perfection

Today I got the urge to actually cook some real meals for myself. Without Joe around I’ve been lacking the motivation.

Inspired  by Brandi, I decided to make pancakes for lunch. I knew I wanted to make them a bit special, though, so I whipped up some blackberry syrup to drizzle over top. I think it was a wise choice.

Paired with a green smoothie, this was the perfect lunch. Of course it wasn’t as pretty once I started digging in…

I’ve been concocting a pizza in my head all week, and I finally had the time tonight to whip it up. Unfortunately, though, my math skills were off and I made enough dough for 2 large pizzas instead of just 1. Woops. Leftovers!

I started by rolling the dough out really thin, and topping it with sauce and thinly sliced tomatoes. A bit of chiffonadedbasil over top as well.

After adding a bit of cheese I put on the remaining 2 toppings: mushrooms, and…

Yep. Sauteed, potatoes with fresh thyme and rosemary. Potatoes on pizza may be a bit weird, but here in Pittsburgh there are several restaurants that offer a pierogi pizza. (pierogis are kind of a big deal here in the ‘burgh) I had an inkling that it would turn out OK. And wow, did it ever…

Tomatoes + fresh herbs + mushrooms + potatoes = one heckuva pizza.

My second pizza didn’t have any sliced tomatoes or basil, and it looked a bit more rustic…

Thin, crispy homemade pizza is where it’s at.

I know the pizza will be great running fuel for my 3 miler I have planned after this post. The half marathon training has been going well lately, I just haven’t been mentioning it as much as I should be. :)

And I’ll leave you with this little guy, who caught me off guard this morning on my way to work. I got down on my knees to get a better look, and snap some shots. He was HUGE!

I may be weird, but large bugs are intriguing to me. It was almost a year ago that I found this moth at work, and then this giant caterpillar.

OK – I’m off to run, and relish in the fact that tomorrow is FRIDAY! :)

    Your pancakes look amazing – that blackberry sauce? yum.

    and I have to say, I have never had potatoes on pizza, but it sounds great and I think I would like it :)

    pizza looks great..

    i left a windown open without a screen in my apartment and had a bug just like that in my bathtub. It was huge and I freaked out! haha

    Aww I miss pierogis, and fries on sandwiches, and Pittsburgh! :) Your pizzas look gorgeous and I love how creative you were with the toppings. Have a great weekend!

    Potatoes + pizza? That’s carbs + carbs which is aokay in my book :)

    I love killing pancakes and cutting them up into 80 million pieces! So much tastier that way!

    Oh my goodness that pizza looks amazing! Great thinking on the sauteed potato slices. YUM!
