Un-beet-able

As I mentioned in the last post, last night I decided to roast a beet. Now, I’m not entirely sure I’m a fan of beets – but I’m getting there.

2 weeks ago at the Farm to Table Conference we saw a cooking demo by a personal chef. She made a salad of arugula, roasted beets, wheatberries, and goat cheese. She explained the processed of roasting beets and I was intrigued. Plus, I really like the sample taste of the salad – beets and all.

Roasting beets is really quite simple:
* Line a baking sheet with foil
* Rub a cleaned beet with olive oil and sprinkle salt on it
* Wrap the beet up in foil tightly, place on baking sheet
* Roast at 400ยบ for about 2 hours

When I took the beet out, it looked something like this:

img_2658To get the skin off, you just rub it with a paper towel. Pretty soon you’ll have the makings of a crime scene on your hands.

Your hands will turn bright pink, and the paper towel will look like you’ve been bleeding all over the place. Once it’s cleaned, you can trim it and slice it up.

I sliced up the beet, and then cubed it. And got rid of the evidence…

You’re left with an innocent looking batch of freshly roasted beets.

This morning I was going to add some of the beets to our smoothies, but I already had so many other things picked out that I forgot about them. Maybe tomorrow…

Yesterday I picked up a giant container of spinach at Whole Foods since we’re running low on kale (we like to alternate between the 2).

Sonny, of course, was interested so Joe indulged his curiosity at a safe distance.

The folks at Superfood Snacks sent us a package of some of their products yesterday. We got several of their “Super Smoothie Mixes” so I knew I had to add some to today’s concoction. I chose this one:

I don’t think I added enough to make it taste any different (about 1 tablespoon), but reading all the benefits made me believe it tasted better. :) Here’s what they say about it:

Sounds good to me! Tomorrow I’ll try adding a little more.

Again, sounds good to me! But the best thing about them is that they are DELICIOUS! I couldn’t savor them enough. I ate 2 of them for a total of 110 calories… not too bad. It was a great pairing with our smoothies which came in around 170 calories each. I feel very energized to get through the day!

No Pirates game tonight so I’ve got Joe at home so we can hang and watch some good Thursday night tv. I can’t believe it’s Thursday already! Hope your day goes well. :)

    No matter how many times I try them, I can’t stand beets! I WANT to like them since they’re so pretty, but I just don’t!

    I have actually never tried a beet, I have to but they freak me out for some reason. The color alone should make me love them though right?

    I grew up on beets, but more in the form of borsht than anything else. Beets are nutritional powerhouses and I really love the taste of them in salads! Thanks for the salad idea.

    Boiling beets takes forever too and roasting took 2 hours? I have an electric oven in my house up at school, I’d feel guilty about using so much energy! :)

    Thanks for posting instructions. I love beets, but only get them out of the can unless I’m eating at a nice restaurant that will roast them fresh for me. Maybe tonight I’ll try roasting one while The Office is on in honor of Dwight.

    I LOVE beets – especially with goat cheese. Have never roasted one myself, but maybe I will try. You step-by-step with pictures will help – thanks!

    I never thought of roasting beets. They look so rich and beauitful when done. Yum!
